A super quick and straight-to-the-point post for you today – pumpkin cheesecake! It took multiple failures and several online conversations with my friend Jenni but we finally have a pumpkin cheesecake worthy of any holiday table – or any type celebration for that matter.

It’s the day before Thanksgiving and while the family celebration will not be in our home this year, we still find ourselves in the kitchen baking; I guess some habits are hard to break. My family is spread out all over the United States from one coast to the other and a few States in between so we aren’t together for holidays; The Professor’s family is anchored in Indiana with a brother in close proximity in the Cincinnati area – it’s nice to share a meal with the family and to visit with the nieces and nephew who are out conquering the world.

MRS. WHEELBARROW’S WHOLE-CRANBERRY RASPBERRY SAUCE

It snowed last night; not much in terms of what’s on the ground – less than 3-inches of the white stuff. Today the sun bounces off the glistening white; I see the tall, now bare trees, swaying in the wind and every once in a while a gust tosses the powder-sugar-like stuff from our roof through the air and onto a new landing spot. It feels very much like I’m on the inside of a snow globe – and I’m grateful to be inside the globe instead of outside the globe because tonight’s temperature is expected to be 7 degrees. Far too early for winter as it’s just the week before Thanksgiving. Somebody hold me.

TWICED-BAKED POTATO JACKETS WITH ROSEMARY

The Professor has been in LA at a college-related workshop all week and while I’ve missed him, I also know he’s had a great time; so far, the group has visited the Dancing With Stars set to watch this week’s live performances as well as a trip to the DreamWorks studio. They weren’t allowed to take photos but that’s alright because the excitement in his voice as he relayed the details was all I needed to know it has been a fabulous experience.

True confession: I’m more interested in the sides during holiday meals than I am the turkey. Dressing (or stuffing as it’s called, depending on which side of the Mason-Dixon line you call home), potatoes, gravy, brussel sprouts, green bean casserole, cranberry salad, cornbread, parker house rolls, biscuits and pie. Kinda makes your mouth water just reading the list, yes?

GOAT CHEESE & PISTACHIO STUFFED DATES

There was a time when I wouldn’t give dates a second look . . . not that kind of date! My mother would bake a date cake occasionally that required the purchase of, I believe, a yellow and red box of diced up date bits, then added to the usual suspects of flour, sugar, butter, eggs and spices . . . but I don’t recall what it tastes like . . . mainly because I don’t recall ever having a piece of it . . . dates were suspect in my 10-year-old mind . . .
