GLUTEN-FREE JAPANESE-STYLE CRAB CAKE BITES

These crab cakes are a spin on sushi – probably my favorite Japanese food. Gluten-free bread crumbs, snap peas, scallions and tamari replace traditional crab cake ingredients, the guacamole-wasabi and pickled ginger garnish give these crab cake bites a fresh twist.

PUMPKIN DIP

It is not lost on me that while I’m still enjoying the last dog days of summer – hello high humidity and 90-degree temperatures – I’m here with a recipe for pumpkin dip. And it’s the last day of August. And we haven’t even seen September, apples or pears. And I rather enjoy taking one season at a time, thank-you-very-much. And over the next couple of weeks, there will be a glut of alllllllll things pumpkin which will hit the blogosphere, so brace yourself. No, sharing a recipe for pumpkin dip in August is not lost on me.

HUMMUS FRY SAUCE

Well hello there! The Professor and I have been traveling these past six weeks on a summer abroad session with 14 college students to Italy; it was exciting, it was fun, it was a learning experience and if I’m being honest, it was, at times, bone-tired exhausting. But we’re back and good Lord, July 4th will be here in another two weeks – I think I’ve said it before but could we just stop time for a few days while I get my bearings???

I’ve been gluten-free for more than three years now and in the beginning, I’ll admit to being a bit apprehensive about navigating the gluten-free world. I knew I was ahead of the game because I already knew how to cook and was relieved I wasn’t learning that skill along with trying to figure out what was safe to eat. And believe me, after you been cross-contaminated a few times, you quickly understand how important it is to be able to eat well while being safe.

It’s the day before Thanksgiving and while the family celebration will not be in our home this year, we still find ourselves in the kitchen baking; I guess some habits are hard to break. My family is spread out all over the United States from one coast to the other and a few States in between so we aren’t together for holidays; The Professor’s family is anchored in Indiana with a brother in close proximity in the Cincinnati area – it’s nice to share a meal with the family and to visit with the nieces and nephew who are out conquering the world.

We’re three weeks in to the new semester for The Professor (hey, that rhymes!) and our fall calendar is color-coded with activites through December; way back when I was a single mom, I assumed, incorrectly, that when my kids were grown and on their own, life would slow down. While there are no more high-school fall football practices or games to attend, I do find most days with multiple deadlines and being pulled in more directions than one. Sound familiar? I thought so.

I will always hold a special place in my heart for The Big Potluck – it was the very first ‘conference’ I attended after launching Smith Bites; it was also the first time I’d traveled sans The Professor since we had married.
