GLUTEN-FREE PEACH DUTCH BABY

The Professor and I have been spending our summer working outdoors, digging in our garden beds and fighting off the critters for our share of the vegetables; so far it’s been critters who have reigned supreme but we’re replanting and hope we get to enjoy more than a handful of this year’s veggies. Such is the life of a country gardener where groundhogs and raccoons are abundant . . . much to my dismay.

GRAIN-FREE, GLUTEN-FREE BLUEBERRY-LEMON PANCAKES

It’s been somewhat of a challenge to come here and write these days; I think some of it has to do with the endless amount of snow on the ground for what feels like an entire year. Add the hide-and-seek sun, cloudy, gray skies and I’m looking to move South. No children or cute puppies, chickens or goats for fodder and honestly, I’m not sure The Professor and I make for interesting stories. The key, I’m told, is to just sit and write – to show up, don’t process your thoughts, find a chair, a pen, paper and write . . . where is that Easy Button they advertise???

RSVP REDUX SEPTEMBER – BLUEBERRY CORNMEAL PANCAKES

Musical pairing – Ain’t No Mountain High Enough by Michael McDonald

I think I’ve mentioned here before that I haven’t always been a breakfast eater; in my defense I think it’s because I don’t get particularly excited about cold cereal nor am I a fan of drinking milk straight up – ugh.  BUT give me a great egg dish, biscuits and gravy, some candied bacon or these blueberry-cornmeal pancakes and I’m so there.  In fact, now that I’m a grownup (and I am a grownup, ahem . . . plus . . .) cold cereal for breakfast is almost non-existant in this house.
