SHAKSHUKA

Some Sunday mornings The Professor and I attend a country church just across the street from our house; some Sunday mornings we sleep late, wake slowly, have random conversations while still in bed. And because it’s winter here in the Midwest, I usually start the conversation something like this:

‘Did you sleep well?’

‘Yes; how about you?’

‘I slept well too – all through the night as a matter of fact.’

‘That’s good.’

‘What’s the temperature supposed to be today?’

‘Well, the weather-guessers say one degree.’ ‘

For a high??’

‘Yep’

(pause) ‘Do you want to go to church today?’

‘Maybe. But staying here snuggled in this comfy bed, having you next to me and wrapped in blankets is pretty nice too.’

‘It is quite lovely, yes. (pause) So one degree outside, really?’

‘Yes.’

‘I guess getting outside for a hike is outta the question then?’

‘Yup.’

(pause) ‘Thank goodness . . . dodged that bullet!’

OLIVE OIL GELATO WITH ROSEMARY AND STRAWBERRY JAM

The Professor and I are headed off for Italy to attend Jovial’s Culinary Getaway, Gluten-Free Italian Style; we’re attending as particpants this time and I have to say, we’re pretty excited. We’ve had the privilege of working with Jovial this past year and we always have their products in our pantry – but we’ve not attended the class as students so this is going to be great fun!

I imagine I’m like quite a few who grew up eating soup from a red and white can – you know, the kind where you pour the contents into a pan, fill the empty can with water, add that to the pot, stir and heat? Vegetable Beef with Barley, Chicken Noodle, Chicken and Stars, Tomato, and Cream of Mushroom were lined up like tin soldiers behind the tall blue and white cabinets in that galley kitchen in the little house on Ankeny Street.

The Professor and I celebrated our 15th wedding anniversary last month; and while we don’t normally celebrate the usual ‘Hallmark greeting card’ days like Valentine’s day et al, we do plan something special for our anniversary. It’s not that we poo-poo celebrations, it’s just that we seem to celebrate each day we have with one another – taking the time to sit on the deck watching the birds at our feeders, listening to a piece of music or sipping coffee while watching a sunrise in complete silence – those are moments worth celebrating throughout each day, each month throughout the year.

ASPARAGUS SALAD WITH TOMATO VINAIGRETTE

The Professor and I are participating in Verizon’s ‘Savy Gourmet’ program and have been having fun testing Motorola’s new XYBoard (ZIE-board). We met a group of Midwest friends in Chicago last month to get a few lessons on what this new tablet can do. We’ll be talking about the XYBoard tablet in future posts but now I want to share my take on a particular salad we enjoyed at a top-secret dinner, held in a top-secret place.

GLUTEN-FREE FENNEL TART

I have been a ‘pie girl’ for as long as I can remember; my choice of birthday treat was almost always a cherry pie – except those times when I requested Angel Food cake – primarily because I thought maybe eating Angel Food cake would make me more . . . shall we say, ‘angelic?’ No such luck. The words, ‘sweet’ or ‘angelic’ are never used to describe me and I’m okay with that. I’ve learned to embrace my other qualities . . . I won’t bore you with the details now, but suffice it to say that ‘loving pie’ is at the top of that list.

I’m pretty sure even those who love to cook or bake want to push the Easy Button every once in a while; it happens here in my kitchen too. Even though I have an office at home, I still have clients to service, phone calls to make, emails to respond to, bills to pay, invoicing to send out, mail to drop, yadda-yadda-yadda. And like the rest of you, I juggle all of that and then some amongst the laundry, running the sweeper, grocery shopping and cleaning the toilets – ah yes, Cinderella, I do live a glamorous life (said very much tongue-in-cheek).

What feels like an eternity but in reality was only a month ago, The Professor was gone for the weekend and I took the opportunity to head down to Indianapolis to do some shopping . . . yep, actually drove. by. myself . . . and I didn’t get lost which is quite the accomplishment if you know me and my sense of direction . . . or the lack thereof . . . But on the way home, I stopped in at the grocery store and picked up a couple of salads from the deli counter; one was a Japanese Tofu salad and the other was a Quinoa (KEEN-wah) salad – I enjoyed them enough to recreate both with my own spin . . .

Unpretentious yet sophisticated, easily accessible yet fabulous food you can serve at a dinner party – that is how I would describe Cristina Ferrare’s new book, ‘Big Bowl of Love’. I’m sure you know Cristina, but if you don’t you should check out her cooking show on Oprah’s OWN Network; she not only knows her way around the kitchen but Cristina is a hoot to watch. I laughed out loud during one episode where, after cooking spa food, she sits down at the table and asks the guest chef, ‘Is that all you’re going to serve me of this delicious food?!’ Cristina’s gusto and passion for great food is infectious . . . and great food is exactly what you get on page after beautiful page of satisfying recipes.
