BLOOMINGTON BITES: CRUSTLESS LEEK & KALE QUICHE

‘FARMER’S MARKET PANTRY’ – In the good tradition of many food blogs––like, say, Smitten Kitchen––I’ve gotten some experience this summer doing small-kitchen cooking. My girlfriend is subletting an apartment with a kitchen that, while not exactly claustrophobic, is certainly not palatial, and requires a lot of cooking that looks more like some sort of intricately choreographed dance. But the smallness of the kitchen doesn’t mean we can’t cook and, what’s more, has caused us to realize all over again that sometimes it’s what’s outside of the kitchen that’s the most important. When we’re at the apartment, after all, we can walk to the farmer’s market. It’s a long walk, but one filled with beautiful early morning sights and smells, and rewarded with a trip to the “pantry” far better than any we could experience in even the largest, best-stocked kitchen.

GARLICKY TORTELLINI SOUP WITH KALE

We’re year-round soup fans here at Smith Bites – chilled soups during the warmer months and hot soups during the winter months.  And with just a few exceptions, we make them from scratch using common pantry and/or ingredients I have tucked away in my freezer. Some soups are broth-based and some are cream-based but every soup is full of flavor and makes a terrific lunch or dinner.  Roasted Red Pepper, chowder, lightening fast tomato, chili or hearty lentil, simply add a salad or some great crusty bread and voila’, dinner is served – it just couldn’t be easier!

Last fall, a friend of mine sent out a call on Facebook to see if anyone on her list would be interested in doing an ‘I-walk’ – an internet walk which meant that we each walk independently and then post our miles daily so that (a) we tracked our miles and (b) it gave us accountability as well as a platform to encourage one another.

We’re year-round soup fans here at Smith Bites – chilled soups during the warmer months and hot soups during the winter months.  And with just a few exceptions, we make them from scratch using common pantry and/or ingredients I have tucked away in my freezer.  Some soups are broth-based and some are cream-based but every soup is full of flavor and perfect for lunch or dinner.  Some have meat while others are full of vegetables: lentil, chowder, lightening fast tomato, chili, roasted red pepper – perfect for The Professor’s lunch or a quick dinner when work is particularly busy and I haven’t had time to get a meal together. Add a salad or some great crusty bread and voila’, dinner is served.

This tortellini soup has just eight ingredients but comes together in about 20 minutes, tops – Girl Scout, cross-my-heart, hope-to-die, stick-a-needle-in-your-eye – I promise.   This is real food, real fast, at its finest and does not skimp in the flavor department!
