GLUTEN-FREE EGG SALAD BREAKFAST SANDWICH

If you’re like me, school is back in session and most mornings the alarm comes way earlier than you’d like, am I right? In my house, there are lunches to pack, showers to be had, workouts to be completed and breakfast to be eaten – and sometimes I’d like something more than a green smoothie, scrambled egg or piece of toast with nut butter. The Professor needs something with protein but we also want our breakfast healthy – as in nothing with sugar yet is filling and tastes great!

LEMON TWIST HUMMUS WITH SPRING PEA PESTO & GREMOLATA

We made it through winter and as I look out my dining room window, my tulip are blooming, the iris stalks stand high, the peony stems stand straight and tall like soldiers – buds will soon follow! The rose bushes are awake, full with brand new green-red stalks and buds; the hydrangeas have been pruned and a few chartreuse-green leaves have sprouted, the lilies have broken through the dirt – in other words, Spring has finally, finally arrived! Can we all just say a collective ‘Hallelujah!’

HUMMUS FRY SAUCE

Well hello there! The Professor and I have been traveling these past six weeks on a summer abroad session with 14 college students to Italy; it was exciting, it was fun, it was a learning experience and if I’m being honest, it was, at times, bone-tired exhausting. But we’re back and good Lord, July 4th will be here in another two weeks – I think I’ve said it before but could we just stop time for a few days while I get my bearings???

CREAMY MOROCCAN-STYLE CHICKPEA SOUP WITH WILTED CHARD

This is one of the down and dirty, quick and easy recipes. While most of the cooking and baking we do here on the Smith Bites homestead is from scratch, there are times – like now when I have several deadlines looming over the next two weeks – we still want to eat well yet have something ready in less than 30 mintues. And this soup is one of those recipes.

INDIAN-SPICED POTATO SKINS

So these little bites came about because The Professor and I both really enjoy Indian food – and we don’t make it at home – although I’m not sure why. I think it’s probably more a mindset than execution – and we don’t have any cookbooks covering this particular cuisine. But it’s a lovely marriage when curry, garam masala and chili peppers meld together with the tang and creaminess of yogurt and . . . well, just typing the words and I’m like Pavlov’s dog.
