LEMON TWIST HUMMUS WITH SPRING PEA PESTO & GREMOLATA

We made it through winter and as I look out my dining room window, my tulip are blooming, the iris stalks stand high, the peony stems stand straight and tall like soldiers – buds will soon follow! The rose bushes are awake, full with brand new green-red stalks and buds; the hydrangeas have been pruned and a few chartreuse-green leaves have sprouted, the lilies have broken through the dirt – in other words, Spring has finally, finally arrived! Can we all just say a collective ‘Hallelujah!’

LACTOSE-FREE SMOKED SALMON PARTY DIP

The Professor and I are in a little bit of a shock to find ourselves mid-November already; I’m not sure why, but when I was younger, I wanted nothing more than to grow up and become an adult. As an adult, I want time to stand still so I can catch my breath for just one New-York-minute. And I’m absolutely certain that if I were to take a poll asking if anyone else is having this same experience, I’d be looking at raised hands as far as my eyes can see . . . which really isn’t that far . . . but that’s a different story for another time.

The Professor and I are back from Italy – and what a trip it was! And though the locals kept apologizing for the weather, we found the mid-70s temperatures perfect – even the occasional day of rain wasn’t enough to dampen our spirits – we were in Italy!

There are two kinds of ‘beet’ camp – lover or hater . . . there just doesn’t appear to be an ‘in between’ . . . and we fall squarely in the lover camp. I must admit that eating ‘pickled’ or ‘sweet’ from a can was my beet of choice as a child; in fact, I’m not sure I even knew what a ‘whole-beet-from-the-garden’ looked like until I was an adult.

No matter how well you plan something, “stuff” happens, and never is this more true than when traveling.  When we made a quick 3-day trip to Salt Lake City back in May, our intentions were to see our granddaughter, meet Maria and Josh from TwoPeasAndTheirPod, and check out some local culinary establishments – quite a bit for 3 short days.  The Professor takes great pride in planning our trips and he does a fantastic job.  In his Internet research wizardry, he also found that the Viking Cooking School in Salt Lake City offers some pretty fantastic cooking classes.  Our first cooking class together was during our trip to Charleston, SC in March and was a blast – besides, this cooking class would be about Dim Sum!

I love Alice Waters; in fact, I’ve been a fan of Alice Waters long before she became a National movement.  I love that she cares about our earth, I love that she’s a champion when it comes to educating children about food, I love that she wants to educate the rest of us about food and I love her Fava Bean Puree recipe in her new book, ‘In The Green Kitchen.’
