GLUTEN-FREE EGG SALAD BREAKFAST SANDWICH

If you’re like me, school is back in session and most mornings the alarm comes way earlier than you’d like, am I right? In my house, there are lunches to pack, showers to be had, workouts to be completed and breakfast to be eaten – and sometimes I’d like something more than a green smoothie, scrambled egg or piece of toast with nut butter. The Professor needs something with protein but we also want our breakfast healthy – as in nothing with sugar yet is filling and tastes great!

GLUTEN-FREE CURRIED BROCCOLI-CHEDDAR TART WITH BACON

Just a super quick recipe post for you today – and it also happens to be one of our favorites: Curried Broccoli-Cheddar Tart with Bacon. Tender bites of green broccoli suspended in currried whipped egg, scattered with spring onions, cheddar cheese and topped with crispy pieces of bacon. And if that weren’t enough, all that goodness is nestled into a buttery, flaky crust.

SHAKSHUKA

Some Sunday mornings The Professor and I attend a country church just across the street from our house; some Sunday mornings we sleep late, wake slowly, have random conversations while still in bed. And because it’s winter here in the Midwest, I usually start the conversation something like this:

‘Did you sleep well?’

‘Yes; how about you?’

‘I slept well too – all through the night as a matter of fact.’

‘That’s good.’

‘What’s the temperature supposed to be today?’

‘Well, the weather-guessers say one degree.’ ‘

For a high??’

‘Yep’

(pause) ‘Do you want to go to church today?’

‘Maybe. But staying here snuggled in this comfy bed, having you next to me and wrapped in blankets is pretty nice too.’

‘It is quite lovely, yes. (pause) So one degree outside, really?’

‘Yes.’

‘I guess getting outside for a hike is outta the question then?’

‘Yup.’

(pause) ‘Thank goodness . . . dodged that bullet!’

We’ve just come off of one of the best weekends we’ve enjoyed in a long time; it was one of those weekends where even though there were many items on my ‘to-do’ list, I was successful in setting it all aside and forced myself to just ‘be’. But it was hard.

GLUTEN-FREE TUSCAN BREAKFAST WRAP

The alarm sounds off at 5:30am most mornings and by late September (that would be now), it’s still dark, the sun hidden – yet the moon begins to disappear. The Professor stirs first, removes his long body from the bed, hits the alarm and returns for a few minutes while I try to figure out if it’s Monday, Tuesday, Wednesday or Thursday I’m facing. Arms circle my shoulders for a hug, a rub of my back and then, ‘I’m heading to the shower.’ The bed creaks again, bedroom door opens and closes gently . . . and a new day has begun.

KIMCHI DEVILED EGGS AND BIG SUMMER POTLUCK

It’s been a wonderful summer, maybe the best one we’ve had yet, I’m not really sure; life is always full of adventure and good things with The Professor and I count myself very lucky to have him as my life partner. Our travel schedule has been jam-packed traversing to both coasts, to Italy and back again – busy at times, exhausting at times, but always, always, rewarding. The work we are privileged to do fills our need for creativity and the people we meet are warm and genuine; some become friends forever – making our lives very rich indeed.

BAKED EGG ‘CUPCAKES’

I can’t say I ever remember my kids being picky eaters; other than a few vegetables deemed ‘nasty’, i.e., green beans and peas (which they still don’t eat as adults) – my kids were fond of soups, salads, tomatoes, broccoli, carrots, cabbage – even tuna was acceptable in our house. GLUTEN-FREE FENNEL TART

I have been a ‘pie girl’ for as long as I can remember; my choice of birthday treat was almost always a cherry pie – except those times when I requested Angel Food cake – primarily because I thought maybe eating Angel Food cake would make me more . . . shall we say, ‘angelic?’ No such luck. The words, ‘sweet’ or ‘angelic’ are never used to describe me and I’m okay with that. I’ve learned to embrace my other qualities . . . I won’t bore you with the details now, but suffice it to say that ‘loving pie’ is at the top of that list.

I’m pretty sure even those who love to cook or bake want to push the Easy Button every once in a while; it happens here in my kitchen too. Even though I have an office at home, I still have clients to service, phone calls to make, emails to respond to, bills to pay, invoicing to send out, mail to drop, yadda-yadda-yadda. And like the rest of you, I juggle all of that and then some amongst the laundry, running the sweeper, grocery shopping and cleaning the toilets – ah yes, Cinderella, I do live a glamorous life (said very much tongue-in-cheek).
