GLUTEN-FREE EGG SALAD BREAKFAST SANDWICH

If you’re like me, school is back in session and most mornings the alarm comes way earlier than you’d like, am I right? In my house, there are lunches to pack, showers to be had, workouts to be completed and breakfast to be eaten – and sometimes I’d like something more than a green smoothie, scrambled egg or piece of toast with nut butter. The Professor needs something with protein but we also want our breakfast healthy – as in nothing with sugar yet is filling and tastes great!

GLUTEN-FREE PEACH SCONES

It’s been a great summer here at the Smith Bites Homestead; it is the first summer where The Professor didn’t teach during the break and we’ve had more than eight weeks to dig in our garden, work on our home and just simple be – sleep late, stay up late, read books, have friends over, bake, grill, eat and repeat. It has been glorious and was exactly what I needed to fill my soul.

GLUTEN-FREE CURRIED BROCCOLI-CHEDDAR TART WITH BACON

Just a super quick recipe post for you today – and it also happens to be one of our favorites: Curried Broccoli-Cheddar Tart with Bacon. Tender bites of green broccoli suspended in currried whipped egg, scattered with spring onions, cheddar cheese and topped with crispy pieces of bacon. And if that weren’t enough, all that goodness is nestled into a buttery, flaky crust.

GLUTEN-FREE MAPLE-BACON DOUGHNUTS

Doughnuts. The mere mention of doughnuts and my knees grow weak; glazed, frittered, cream-filled, jelly-filled, cinnamon dusted, powder sugar dusted, nut-topped, plain, fried or baked, I’ll admit to being an equal opportunity eater of all things doughnuts.

SHAKSHUKA

Some Sunday mornings The Professor and I attend a country church just across the street from our house; some Sunday mornings we sleep late, wake slowly, have random conversations while still in bed. And because it’s winter here in the Midwest, I usually start the conversation something like this:

‘Did you sleep well?’

‘Yes; how about you?’

‘I slept well too – all through the night as a matter of fact.’

‘That’s good.’

‘What’s the temperature supposed to be today?’

‘Well, the weather-guessers say one degree.’ ‘

For a high??’

‘Yep’

(pause) ‘Do you want to go to church today?’

‘Maybe. But staying here snuggled in this comfy bed, having you next to me and wrapped in blankets is pretty nice too.’

‘It is quite lovely, yes. (pause) So one degree outside, really?’

‘Yes.’

‘I guess getting outside for a hike is outta the question then?’

‘Yup.’

(pause) ‘Thank goodness . . . dodged that bullet!’

PUMPKIN-GINGER SMOOTHIE

Well friends, I am plum-tuckered, spent, zapped and officially feel as if I could sleep for the next two months; I’ve been traveling since September and I haven’t been home much these past several weeks. But I also have to say that I’ve never been more inspired, humbled and ready to tackle new projects than I am now . . . that is, after I sleep for the next two months . . .

GRAIN-FREE, GLUTEN-FREE BLUEBERRY-LEMON PANCAKES

It’s been somewhat of a challenge to come here and write these days; I think some of it has to do with the endless amount of snow on the ground for what feels like an entire year. Add the hide-and-seek sun, cloudy, gray skies and I’m looking to move South. No children or cute puppies, chickens or goats for fodder and honestly, I’m not sure The Professor and I make for interesting stories. The key, I’m told, is to just sit and write – to show up, don’t process your thoughts, find a chair, a pen, paper and write . . . where is that Easy Button they advertise???

GLUTEN-FREE GRAIN-FREE BANANA MUFFIN WITH STREUSEL

Yes, I’m being mean – tempting those of you on a diet of cleanses, salads and carrot sticks.  Just tuck this recipe away until after January, because gluten-free and grain-free or not, these are pretty damn good – so says The Professor.

GLUTEN-FREE WINTER-SPICED GRANOLA

It’s the second day of January 2014 – a brand new year with brand new possibilities and brand new experiences that will unfold in the coming months. At the moment we’re bracing for some of the coldest temperatures this part of the country has seen in decades.

GLUTEN-FREE, LACTOSE-FREE, GRAIN-FREE SOUR CREAM PUMPKIN CAKELETTES

This is a post I’ve wanted to write for a while now because almost two years ago, The Professor and I completed a mini-kitchen update and streamlined our pantry into one area. Before then, we had pantry items stored on shelves in our basement, on a shelf above the stairs leading to the basement, on shelves in our studio area, an extremely deep pantry, and non-functional cabinet in the kitchen and anywhere else we found empty. There are just two of us. I may need an intervention.
