Deflate-gate, the unexpected and sudden loss of a beloved member of our food community and the snowpocalypse that wasn’t (at least in New York) – it’s not a stretch to say that it’s been a roller-coaster couple of weeks. I had planned to post this recipe much sooner in the month but sometimes life happens and well, here we are.
I’m not a die-hard sports fan but I’ll admit to staying up late watching a nail-biter – as well as heading to bed early when the game is a blowout. And I remember my father watching Super Bowls during the days of Joe Namath, Mike Ditka, Joe Montana, John Elway, Tom Flores, Roger Staubach and Dave Krieg; snacks were always involved – usually sandwiches, chips and finger-foods. Tailgating wasn’t a ‘thing’ but the commercials were always a hoot and always a part of the tradition.
Regardless of who you’re rooting for (go Seahawks!), this queso dip should definitely be on your snack table this weekend; I’ve never been a huge queso fan but this dip is a game-changer. Cream, American cheese slices and Sabra’s Chunky Pico de Gallo make it perfect for dipping but we’ve also used it as a base for barbecue nachos!

QUESO WITH SABRA PICO DE GALLO
Makes approximately 2 cups of Queso Dip
INGREDIENTS:
- 1/4 to 1/2 cup of heavy cream, depending on consistency desired
- 16 slices of American Cheese
- 1 cup of Sabra Pico de Gallo
METHOD:
- In a medium saucepan add heavy cream and bring to a low simmer; adding one slice of American cheese at a time, whisk until completely melted
- Stir in Sabra Pico de Gallo
- Serve immediately
